Dragon max stats are 825 hits 825 Str 475 int. so you should try to get as high as possible in all those stats Dex doesn't matter so never worry about dex.
WW max stats are 760 hit 760 str 425 int. for WW int and str are most important but hits are important too.

dex affects 2 things Swing speed and following speed.
swing speed is increased in tiers of 30. at 90 dex wrestling reaches the min swing speed and gains no further improvements from more dex.
all high end pets can increase their dex to 100. max dex on dragons is 105 so it really doesn't matter for them. WWs max dex is 130, but the only thing that will improve is following speed.
thus dex for dragons, WWs, and mares does not matter.
