Every server I've ever played on, including the main ones, typically ignores the same set of skills in the game. IMO, with a little creativity, these skills could be improved to add a little additional dimension and playability to the game. Here's my thoughts - what's yours? And to Server Administration: What would it take to convince you to get some changes made?
Cooking/Poisoning/TasteID - GM cooks should be able to create all sorts of wonderful items. Food & Drinks that grant buffs or perform certain actions (perhaps a skill gain food?) A GM Cook that has poisoning could even add a little surprise to any food he or she chooses. The level of the cooks poisoning would determine the "taste identifiers" ability to detect the poison...a GM Cook/Poisoner could inflict damage rapidly so that one bit (or sip) equals instant death... Therefore, an element of role playing could be introduced where one could flood the market with buff foods, skill gain drinks, etc, t hat might (or might not) be poisoned, better pick up a little taste ID to find out!
A branch of "cooking" that a new skill could be created for would be bartender, where "drinks" are made, like cooking, but have different buffs that compliment certain buffs with food (example: a nice white wine, combined with a GM level fish steak = seriously good buff)
Herding: GM Herding should open up additional taming slots...perhaps enough for 2 dragons + 1 mount
Begging: GM Beggars cannot be attacked, by other players, except by Dread Lords, unless they are flagged criminal. Side perks, getting actual good weapons/armor/good gold amounts from certain NPCs. This one seems like it could be a lot of fun. Maybe a high STR attribute lowers your chance, even at GM begging, for certain perks, and a high INT dramatically increases your chances of success and getting better items.
Forensic Eval - at GM level, you can put bounties on Red heads that kill you. Creates incentives for anti-PK's to pop-up.
Camping - can work in conjunction with cooking - perhaps a meal cooked over any camp fire provides additional buff status of some sort. Cooking, and all other skills like it, should be complimentary in nature...some may not get this reference, but think of a "Bard" from Final Fantasy 11...a GM Cook, in UO, could play a similar role to a party/guild.
Item ID - GM ID gives you a better chance, when ID'ing items, to find a slayer / badass magical.
