stat gain with max skill

So I'm making an inscription macer. I GMd mace tact anatomy and healing. Then was going to gm magery med and resist. Then drop med and gm inscript.

Then it hit me I need at least 50 mana to create high circle spells to gm inscription which leads me to my dilemma. I don't want to end with 50 magery... More like 40 or less... How will I be able to balance stats with 700 skill points??

I guess I could drop a little macing for another skill sense it took me less than an hour to gm beating on the same zombie with a smiths hammer. But is there a way to adjust stats without losing skills to gain a useless skill?
