• Is there any product that only can be crafted with fletching and some other crafting skill? As far as I can tell fletching is exclusively for archery products (in contrast, tinker-carpenters can make locked boxes, etc.)?

• I read that mining increases the ingots that blacksmiths produced by smelting. I also read that it only enables you to smelt different colors of ore. If the amount of ingots produced by smelting is skill dependent (is it?) , is it dependent on both blacksmithy and mining or the greater of the two?

Fletching is only for bows and arrows.

I believe smelting more ingots than the base amount is dependent on mining.

Someone else can confirm or correct.

120 Mining here, You get 'more' ingots from higher colored ore piles, only because you fail smelting less.
1 ore =1 ingot.
Mining is the sole skill to determine what ore you can smelt, and your success rate of smelting said ore.

There is always the possibility to get double amount of iron ingots. You need at least GM mining. With 125 mining I got double amount of iron ingots around every sixth time. If I remember it right.

125 Mining is maximum you can have. Like 125 tactics with the right slayer.
